Heat a skillet to medium heat. Slice croissants in half with a serrated knife. Add croissants to pan and toast on both sides. Remove from pan.
Add olive oil to pan and fry ham until browned and crispy. Remove to a plate lined with a paper towel to remove any oil from the ham.
Wipe out your pan. Crack eggs into pan and add butter. Season eggs with a pinch of salt and Old Bay seasoning. Use a spoon to baste the egg yolks with the butter until the top is cooked through. Remove eggs to a plate.
Whisk together mayonnaise, lemon juice, 1/2 tsp Old Bay seasoning, and Louisianna hot sauce.
Add sauce to the bottom croissant. Top with your ham, OPTIONAL: sliced cheddar cheese, egg, a little more sauce, and the top of the croissant.
