Boursin Filet
The crispy onions and creamy boursin cheese takes an already exceptional steak to a whole other level.
Ingredients
Mashed Potatoes
- 1 lb Yellow Yukon Potatoes
- 3 tbsp Unsalted Butter
- 3 Garlic Cloves
- 1 bunch Fresh Thyme (5 -6 sprigs)
- 1 Bay Leaf
- 1/2 tsp Nutmeg
- 3/4 Cup Heavy Cream
Boursin Cheese
- 8 oz Cream Cheese Room Temperature
- 4 oz Unsalted Butter Room Temperature
- 4 tbsp Parmesan Cheese Freshly Grated
- 1 tbsp Fresh Dill
- 1 tbsp Fresh Thyme
- 2 tbsp Fresh Parsley
- 1 tbsp Fresh Basil
- 2 Garlic Cloves
- 1 tbsp Sea Salt
- 1 tsp Ground Black Pepper
Tabacco Onions
- 1 Red Onion
- 2 Cups Butter Milk
- 1 Cup All Purpose Flour
- 1 Cup Yellow Corn Flour
- 1 tbsp Sea Salt
- 1 tsp Cayenne Pepper
- Canola or Peanut Oil For Frying
Filet
- 2 9oz Filets
- 2 tbsp Unsalted Butter
- 2 Garlic Cloves
- 1 bunch Fresh Thyme (5 – 6 sprigs)
- 1 tbsp Canola Oil
Instructions
Mashed Potatoes
- Leaving the skin on, cut potatoes in half and add to a pot of water. Boil potatoes until you can stick a fork in them and it slides off. Drain water and return potatoes to pot.1 lb Yellow Yukon Potatoes
- A stand mixer makes it easy to mash the potatoes but a hand masher will work just fine. Mash potatoes until there are no more clumps.1 lb Yellow Yukon Potatoes
- In a small pot add heavy cream, butter, thyme sprigs, bay leaf, whole garlic cloves, nutmeg, salt, and pepper. Simmer on low heat for 5 – 10 minutes.3 tbsp Unsalted Butter, 3 Garlic Cloves, 1 bunch Fresh Thyme (5 -6 sprigs), 1 Bay Leaf, 3/4 Cup Heavy Cream, 1/2 tsp Nutmeg
- Using a strainer, strain the cream mixture over your potatoes. Use a fork to mash the garlic cloves through the strainer. Combine mixture well with potatoes.
Boursin Cheese
- Bring cream cheese and butter to room temperature. Add to a stand mixer and mix on medium speed 1 – 2 minutes until whipped together.8 oz Cream Cheese, 4 oz Unsalted Butter
- Roughly chop basil, thyme, dill, parsley. Grate parmesan cheese. Chop or grate garlic cloves. Add everything to butter/cream cheese mixture. Add salt and pepper. Mix on medium speed for another minute until everything is well combined.4 tbsp Parmesan Cheese, 1 tbsp Fresh Dill, 1 tbsp Fresh Thyme, 2 tbsp Fresh Parsley, 1 tbsp Fresh Basil, 2 Garlic Cloves, 1 tbsp Sea Salt, 1 tsp Ground Black Pepper
- Scrape the sides of the bowl down if needed and mix for another minute.
- Store cheese in a container or you can use a piece of parchment paper to wrap the cheese which makes it easy to slice. Store in refrigerator until ready to use.
Tabacco Onions
- Thinly slice onion using a knife or mandolin. Add onions to a bowl. Add buttermilk to bowl and let onions soak for 30 minutes to 1 hour.1 Red Onion, 2 Cups Butter Milk
- Combine flour, yellow corn flour, salt and cayenne pepper in a bowl.1 Cup All Purpose Flour
- Toss onions in flour mixture and coat well.1 Cup Yellow Corn Flour, 1 tsp Cayenne Pepper, 1 tbsp Sea Salt
- Heat canola or peanut oil in a deep pot or cast iron skillet to 350 degrees. Onions should be fully submerged in hot oil. Add onions and cook for 2 – 3 minutes until crispy. Drain onions on a sheet pan lined with paper towels. Season onions with salt.Canola or Peanut Oil For Frying
Filets
- Heavily season tenderloin filets with salt and pepper.2 9oz Filets
- Heat skillet over medium-high heat. Add canola oil to pan. Add filets to pan. After turning over steaks, add butter, garlic cloves and thyme sprigs to pan. Use a spoon to baste filets. Cook filets 3 – 4 minutes per side to desired doneness. Remove from heat and rest for 10 minutes before serving.2 tbsp Unsalted Butter, 2 Garlic Cloves, 1 bunch Fresh Thyme (5 – 6 sprigs), 1 tbsp Canola Oil
Assemble
- Plate mashed potatoes. Add cooked filet on top of mashed potatoes. Add a spoonful of boursin cheese on top of the filet. Top with as many onions as you like. OPTIONAL: Sprinkle freshly chopped chives over your plate.
